Keto Creamy Celery and Mushroom Soup
This creamy keto soup is packed with earthy mushrooms, tender celery, sweet shallot and finished with heavy cream.
This makes a great light lunch or dinner option served with buttered keto bread for dipping.

Ingredients
Mushrooms
5 medium
Vegetable Broth, Bouillon Or Consomme
3-½ cup
Shallot, Raw
2 tablespoon, chopped
Garlic
1 clove
Celery
1 cup
Unsalted Butter
1 tablespoon
Heavy Cream
½ cup
Recipe Steps

Step 1
Melt the butter in a large saucepan. Add the shallot and sweat gently for a minute. Thinly slice the garlic and add to the pan, sweating for a minute more.Step 2
Roughly chop the celery and quarter the mushrooms. Add to the pan and stir well. Cook for 2-3 minutes to brown the mushrooms.Step 3
Add the stock and bring up to a gentle boil. Reduce to simmer for 6-7 minutes or until the celery is tender.Step 4
Transfer to a blender or use a stick blender and process until smooth. Stir through the cream to serve.

Comfort soup!! I doubled this, exchanged the shallot for sweet onion. Also, I used Chicken Broth vs. Vegetable to lower the carbs. Was delicious with a sprinkle of shredded cheddar cheese. Also with a pinch of nutmeg. Next go round I will bump it up with a small jalapeño pepper. Thank you!

Such a good soup! I've made my own cream of mushroom soup in the past but this soup has a different flavor. While it is, "mushroomy" the celery flavor comes through nicely. I removed some of the strings in the celery before chopping just to assure I had a smooth soup. I doubled the recipe but not the cream, I will make this again.

Super good. I doubled it and sautéed sliced roasted mushroom slices to garnish. I began to blend with my hand blender but quickly realized that wasn’t going to get to the smooth consistency that I wanted, so I pulled out my Vita Mix.

I wondered how this would turn out. I used 1/2 cup Cashew Cream instead of thick cream and blended through rather than swirl on top and used a very small onion rather than a shallot. Everything else was as per recipe. What a lovely soup. Yes, I think I will make it again. Husband also liked it.

I made this recipe exactly as written. Using rehydrated Costco gourmet mushrooms, I did skip the mushroom sauté step. It is deliciously flavourful and aromatic. Creamy but not overly thick. I do prefer not to add keto thickeners to my cream soups as I find they add a gelatinous texture. This is definitely a two thumbs up!

This is so good! I just did less stock so my soup was thicker. I made a double batch so I can have leftovers in the freezer on my second time making it!

Try it with one hard boiled egg and some cheese of your choice! Also add just a few pork rinds to simulate crackers.

This was really tasty and I’m not a celery fan. It was a bit thin so I added 1/4 tsp xanthan gum to thicken it up. I’ll be buying more mushrooms today for another batch. And I like the thyme idea.

This was so delicious and aromatic. The celery really made the mushrooms have some personality. The cream or so decadent. I will be making this a lot. I made exactly according to directions. No changes.

Just made this soup but had to change it up a bit cause I didn’t have all ingredients so .... ginger instead of garlic and coconut cream instead of heavy cream. Came out delicious 😋 never thought to put celery and mushroom together but Gr8 combo
