Almond Flour

Baking Powder
2 teaspoon
Coarse Kosher Salt by Morton
¼ tsp
Butter, Salted

Ube Extract by McCormick

Raw Egg

Almond Milk

Cream Cheese
8 ounce

Step 1
Preheat an oven to 350 F. Prepare a cupcake tin by filling it with 12 cupcake liners. Combine the dry ingredients together (almond flour, 1 cup Swerve, baking powder and kosher salt).Step 2
Melt the butter in a microwave safe bowl. Add this to the dry ingredients along with 1 t ube extract and the eggs.Step 3
Mix slightly.Step 4
Heat the almond milk in a heatproof container until hot. Add to the batter and mix well to combine.Step 5
Scoop the batter evenly into the 12 cupcake liners.Step 6
Bake for 25-27 minutes until the cupcakes are puffed, cooked through a slightly browned on top. Remove from the oven and allow to cool in the cupcake tin until completely cooled. Allow to cool before frosting.Step 7
In the meantime, combine room temperature cream cheese, the remaining Swerve, ½ t ube extract, a pinch of salt and 1 tablespoon of heavy cream in the bowl of a stand mixer. Mix for 3-5 minutes until the frosting is light and fluffy. Place in the fridge until ready to use.Step 8
Top each cupcake evenly with frosting and swirl to desired effect!

I baked at 250 degrees F instead for about 30 mins and the texture was perfect. Absolutely loved, thank you for this recipe!!

Thank you for this! I’m Filipino and grew up with Ube. When I started Keto I was disappointed I’d prob never eat Ube desserts ever again.

These hit the spot. Would probably give 5 stars if the frosting was a little sweeter. I could not find UBE so I used cake batter extract instead. Yum
