  • Step 1

    Prepare the chicken thighs by laying them flat on a clean surface. Sprinkle them evenly on the exposed side with salt and pepper.

    Gently wrap each chicken thigh with bacon. Some larger pieces may require an extra half slice of bacon. Make sure all bacon ends meet on the underside of each thigh.

    Heat the olive oil in a large skillet on high heat. When the skillet is ready, place in the chicken thighs. Cook on each side for 8-10 minutes or until the chicken is completely cooked through. Set the chicken aside to rest.

    In a new, small pan, melt the butter over low heat. Gently whisk in the heavy cream. Bring the liquids to a simmer, and whisk until the fats are no longer separated.

    With the sauce on a low heat and a gentle simmer, whisk in the cheddar cheese in 3-4 additions. Stir the sauce until it’s creamy and smooth. Serve hot over the chicken and enjoy!

    Great combo of flavors! I was nervous about overcooking the bacon so just chopped everything up and cooked the chicken for a few minutes before adding the bacon. Would be great over mixed greens. I likely will add some onion or garlic next time.

      When cooking bacon. Comes away from chicken, bacon ends up burning. Burnt bacon tastes terrible. Would be way better if cooked only in oven

        Worked perfectly in my Ninja. Pressure cooked 10 minutes with chicken broth as the liquid, followed by 8 minutes crisping. Came out perfect, chicken was moist and flavorful and bacon crispy. Family also loved it!

          Very good. Next time I will probably cook the bacon separately so all of It gets crispy then stick it on top of the chicken. Maybe split the cheese with Gouda and cheddar and add some pepper or garlic

              I’m lucky I have restraint because I would have ate all the servings if I didn’t. It is that good! I used chicken breast because I don’t like thighs and I cooked them in the air fryer because it’s my preferred method of cooking chicken. But WOW! The cheese sauce was so simple, but tasty. I just added some salt and pepper. Will probably make every day for the rest of my life. lol.

              Very flavorful but cooked the first batch in the stove and it didnt work. The chicken didnt cook all the way through and the bacon burnt. Took A LOT longer on the stove. Now trying it in the oven. Also, the cheese sauce needs something to spice it up. Too bland—added garlic and it was amazing. Great idea! Thanks so much for the recipe!

                Pop a dash of cayenne pepper in the cheese sauce for a little kick, or even simply salt and white pepper. It's the second most forgotten about thing in Keto food, seasoning. Behind carbs of course!

              This chicken is awesome! I doubled the recipe but I had trouble with the sauce, so I added a whisked egg and extra cheese to thicken it some. It stayed thin but still tasted great!

                            Love this recipe but I did not do the cheese sauce. I baked the chicken in the oven @400 for 17 minutes and broiled the chicken for 2 minutes for crispiness. I made a salad with tomato and lettuce and a little vinegar. Did not add any extra seasoning for a healthier option.

                                Great recipe but you can tweak it a little for less calories. For one, bake in oven instead of using oil to fry. Then, you can use turkey bacon but it wont taste the same. I had to add a teaspoon of cornstarch to sauce to thicken but my family LOVED IT!!!

                                      Delish! had brussel sprouts for a side, drizzled some of the cheese sauce over them DROOL!!! I am not a fan of thighs, so I think next time I will sub for some chicken breasts.

                                        Absolutely amazing! Throw some fresh veggie on the side and I was hooked. Keto has been tougher for me cooking since I’m a toss in this and toss in that kind of cook but following this and adding a little bit of seasoning to the sauce made a perfect dish.

                                          This is some of the best chicken I've ever had. I did add a little garlic powder to the chicken. The cheese sauce was also very good I added a little Slap yo mama and some smoked paprika. I drizzled my serving over the chicken and some broccoli florets. Husband and teenager approved.

                                            This is a great recipe, but I did have to make some minot tweaks. First off I seasoned the chicken with the standard: garlic, onion, and mustard powders. Then I did have to pop the chicken in the oven @400 for about 15 min. Next I also seasoned the cheddar sauce. Same as above but added some basil. The final touch was about 1/4 c fresh shredded parmesan, which adds about 18 calories per serving, but 0 carbs thankfully! Thickens up nicely with the added parm.
