Stuffed chicken is a delicious and easy dinner. Simply make a slice into the side of a chicken breast and fill! This chicken is stuffed with broccoli and feta. I used frozen broccoli florets and steamed them until tender to save even more time. This is a great dish to double or triple so that you have multiple meals!

Ingredients

  • Chicken Breast

  • Frozen Broccoli

    ½ cup, flowerets

  • Feta Cheese

    Feta Cheese

    1 wedge

  • Olive Oil

    Olive Oil

    1-½ tablespoon

    ¼ tsp

  • Spices Oregano Dried

    ¼ tsp, leaves

    ¼ tsp, leaves

  • Step 1

    Steam broccoli in a small pot until you can easily pierce it with a fork.

    Clean and trim the chicken breast. Use a sharp knife to make a slit in the side of the breast so that it becomes a pocket for the filling.

    Mix together the olive oil, salt, garlic, oregano, and basil. Spoon half of the mixture on the chicken breast and rub it all over the chicken. Roughly chop the broccoli and feta and add it to the remaining olive oil mixture. Stuff the chicken breast with the broccoli mixture. If needed, use a toothpick or two to securely close the chicken.

    Bake the chicken at 375 degrees Fahrenheit for 25-30 minutes, or until the chicken reads 165 degrees on a meat thermometer. The time with vary slightly based on how large the breast is. Allow to rest for 10-15 minutes before slicing and serving.

    One of my favorite recipes! I use the chopped broccoli steamed in the bag and crumbled feta to make filling the breast easier. Quick and easy!

        So delicious! I only had thighs, so cut out the bone and then spread the stuffing , then rolled the the thigh with the stuffing in it. Will be on my favorite list.5

          I find stuffing chicken breasts a bit of faff so ended up airfrying the chicken with all the seasoning and made the stuffing into a side dish adding some lemon juice, salt and chili flakes, topped with some pumpkin seeds. Very nice 👌

              Even though I chopped the broccoli rather finely, the filling still wouldn't pack inside the chicken breast easily, so I set the filled chicken breast on its side to form a boat. Good-looking and delicious result!

                    This is fantastic! Instead of the feta I used shredded chedder, topped with a three cheese blend grated parmesan (Kraft) and mozzarella cheese. I substituted Italian seasoning in place of the oregano and used garlic salt (Lawry's) since I didn't have any garlic powder. It is amazing and my wife couldn't believe how good this is! This is my first time making this and my first attempt at stuffing chicken which I had to use a few toothpicks per breast. Definitely will be making this one again!

                        Really good. Definitely make this again. I sautéed garlic, broccoli and olive oil then spooned it in the chicken with shredded parmesan instead of the feta. Sprinkled a little more shredded parm on top. Versatile recipe. You could change up the veggies and cheese combos.

                              This was very yummy! I pulsed in my blender the broccoli after it was cooked before mixing with the feta cheese. All the mixture fit in the chicken breasts. I added some minced garlic to the outside of the chicken. This is a new family fav🥰

                                very little flavor. Next time I would marinate the chicken first and leave the skin on.

                                  Mine turned out even better than the picture! My tip os to leave the skin on, snd use a convection over or air fried to get it super crispy! Even the brocolli and feta were perfectly charred. My only complaint is that I couldn’t put nearly as much stuffing in as zi wanted, so make the pocket as big as possible!

                                    This turned out so yummy. But somehow I managed to have too much stuffing. So what I did was put the feta cheese in the breast and cooked them mostly done then I added the broccoli all around the breasts and finished cooking everything together. It turned out so yummy and made for a very pretty display. I measure everything precisely. I used a scale and measuring equipment. But I’m actually glad it turned out the way it did. So extremely yummy. I highly recommend this. So easy to put together.

                                      This was delicious. I did steam broccoli slightly then added to a sauté pan with 1 Tbps of evoo, 1 tsp chopped garlic and 1/2 tsp of crushed red pepper flakes just to give the stuffing a bit more flavor. Also, I pounded my boneless chicken, stuffed and tied them as I found this process easier. Definitely a keeper!

                                            Just cooked and devoured this! Really tasty. I actually stuffed fresh garlic cloves in mine. I wish I could have more than 1! :)
