    Scramble your eggs in a small mixing bowl. Season the eggs with some salt and pepper. You can add additional seasonings at your discretion at this point.

    Add in the heavy cream and the shredded cheese. Mix it well with a small whisk or a fork. Make sure the cream is well incorporated as this will add some air to the mixture to ensure it is light and fluffy.

    Choose a ceramic or heat-safe mug that is at least 10-oz for one serving. Fill the bottom of the mug with whole or chopped spinach leaves of your choice. Pour the egg mixture over the spinach in the mug.

    Microwave your mug on high heat for 30 seconds. Stir the ingredients inside the mug. Then microwave on high heat for another 1 ½ minutes, adding 15 more seconds at a time if necessary until the egg is cooked through.

              I used the basic recipe but did it all in a pan with 1 slice of bacon, chopped and diced onion so had it more like scrambled eggs. Loved it.

                    I was making this type of recipe years ago before learned of Keto. And, I was a lot smaller then and working a big girl day job. A coworker turned me on to it. I would use a Tupperware loaded with all my ingredients. Drive to work, pop it in the microwave and join the morning huddle with our team. Yummy and easy. So easy to tweak with an unlimited variety of keto friendly ingredients.

                      This basic recipe was a good base. But I think the next time I make it I will add some extra things into it like maybe some black olives and maybe some bacon bits. I did have a couple of slices of bacon on the side. I did love how quick and easy it was and will do it again but just start trying different things to go along with it. Definitely a keeper.

                            Love how easy and flexible this recipe is. The first time I made it I added a little smoked paprika, and a little chopped green pepper. But the options could be limitless. A minute and a half in the microwave no pots and pans. Total winning recipe.

                            So easy and delicious. Maybe it was the mug I used but some of the egg stuck. Next time I’ll spray the cup with some olive oil and see if that helps

                                        You can recreate this recipe using oven safe ramekins and water bath (bain-marie) or just a baking sheet; it will take longer than 2 minutes. Place the egg mixture in a greased ramekin. Place the ramekin in a baking dish filled with water or baking tray. Make sure the water from the dish doesn't get into the ramekin. Bake at 375F for 10-15 minutes (depends how cooked/set you want your eggs). Using a bain-marie as opposed to just placing the ramekin on a baking sheet will help keep the eggs moist.

                                                Easy to make. Mustard seed calculations in the recipe are off. Using a teaspoon instead of the weight was plenty. I made this in ramekins for a quick dinner. Delicious!
