  • Step 1

    Preheat the oven to 350 degrees Fahrenheit.
  • Step 2

    Slice the tops off each tomato so that they are roughly 1/4 of an inch thick. Set to one side. Carefully scoop out the insides of the tomato and discard or keep for a future meal. Be careful not to pierce through the tomato flesh.

    Heat the olive oil in a skillet over a low/medium heat. Add the garlic and sweat gently until tender, then add the ground beef, Italian seasoning, salt and pepper. Increase the heat to medium and stir to combine, cooking until browned all over.

    Finely slice the olives and add to the skillet along with the mozzarella and fresh basil. Stir well.

    Divide the beef mixture between the two hollowed tomatoes and place the lids back on top.

    Transfer to the oven to bake for 22 minutes or until cooked through and the tomato is tender.
