Recipe Steps

    Place a medium-sized saucepan over medium-high heat. Add the butter and let it melt. Roughly chop the onion and garlic, and add them to the pot.

    Sauté the onion and garlic for 2 minutes until fragrant. Roughly chop the tomatoes and add them to the saucepan. Cook for 3-4 minutes, or until the tomatoes are soft.

    Add the vegetable stock to the tomatoes and season with salt and pepper. Bring to a simmer, then drop the heat to low. Let the soup simmer for 10 minutes.

    Using an immersion blender, puree the tomatoes until smooth. Taste and adjust seasoning if needed. You can pass the soup through a fine sieve if you want a silky-smooth soup.

    Add the heavy cream and stir. Let the soup reduce and thicken for 20 minutes over the lowest heat. If it gets too thick, you can add a little more vegetable stock or water.

                  This was super easy to make and really delicious. I've only ever had canned tomato soup before, this was so much tastier by far. I recommend using a sieve, as the recipe suggests, to get a silky smooth texture. 10/10!

                          I would think a 12oz can of crushed or diced tomatoes would work as well. Go for Muir Glen fire roasted tomatoes if it's in the budget.

                              Amazing! I went crazy and added 20g of red pepper when I added the tomatoes, and 2g of fresh julienned basil Just before adding the cream to jazz it up, but this was so good! Thanks for great recipe. No more store bought tomato soup, as this was very cheap and much better.

                                    I make this soup all the time only I use the other recipe you had posted months ago called “fire roasted tomato soup”and it has the garlic and a lot of fresh basil the recipe said to cut up the plum tomatoes I do about 35 medium size place on a cookie sheet with 8 cloves of garlic cut up, plenty of fresh basil, salt and pepper to taste, place in the oven @ 350* when the skins start to get loose and the tomatoes are tender remove from the oven and let cool, then you can place in your food processor I usually get 4 quarts of sauce I use 2 quarts for my soup by adding chicken broth and the heavy cream. “Definitely Delish” and the other 2 quarts for my sauce for my turkey meatballs, and spaghetti squash, this way I get many keto meals for myself and my family!!

                                      Haven't made this but I would add fresh basil, dash of cayenne, have to check carbs but maybe a tsp of tomato paste or I have Spice house tomato powder. I can also see adding some feta cheese
