  • Step 1

    Whisk together the heavy cream and vanilla pudding mix until you have a thick, lump free mixture. Set this aside in your refrigerator until later.

    In a stand mixer, mix the cream cheese until it is light and fluffy. Mix in the stevia until you have a creamy, smooth mixture.

    Use a spatula to fold the vanilla pudding by hand into the cream cheese. Fold until you have a consistent mixture. Then, gently fold in the blueberries, being careful not to break them too much.

    Serve cold in ½-cup portions. You can top with additional fruit or another keto topping.

    This is a perfect little treat. I only added 1 bag of the Stevia, which was .5 of a teaspoon. I think adding more of the pudding would be better plus you can use any sugar free flavor. These truly are good

      It says to serve it in half cup portions, but that the nutritional info is based off 1 teaspoon serving sizes?
