Okra
6 ounce
Tomato Puree, No Salt Added
2 teaspoon
Cajun Seasoning by Spice Time
1-½ tsp
Scallions
1 medium - 4 1/8" long

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Clean the okra and cut off the tops and tips. Carefully run a sharp knife lengthwise down each okra, taking care not to slice all the way through.Step 3
Finely slice the scallion and add to a mixing bowl with the cream cheese, spices, and tomato purée. Mix together well to combine.Step 4
Carefully prize each okra open and stuff with equal amounts of the cream cheese filling.Step 5
Slice the bacon strips in half and wrap a half around each stuffed okra.Step 6
Transfer to the oven to bake for 23 - 25 minutes until cooked through and the bacon is golden brown.

If you love okra like I do these are a great variation to jalapeño poppers. I always par cook the bacon a little so it gets nice and crispy. I added cheddar cheese and jalapeño to the cream cheese and omitted the tomato purée.
