Everyone loves a delicious grilled pork chop! Pork chops tend to be lean, so these are paired with a herbaceous compound butter that melts wonderfully over the hot pork chops. Make extra of these to have on hand in the fridge as they make great leftovers to be used in hash or on a sandwich made with Keto bread and plenty of sliced cheese. Day of, these pork chops can be paired with a nice Low Carb salad or a Keto side dish recipe made with dark green vegetables or cauliflower mash.

  • Step 1

    Preheat a grill until it is hot, around 400-450 F. While the grill is preheating, season the pork chops with the garlic powder and kosher salt on both sides.

    Place them onto the grill and cook them for several minutes on the first side. Flip them to the other side and cook for another few minutes. Then flip them again but turn them 90 degrees to make a crosshatch pattern. Then repeat on the other side. The total cooking time should be around 5-7 minutes, depending on your grill. You will want to look for pork chops that are cooked through and have reached an internal temperature of at least 145 F.

    While the pork chops are cooking, make the compound butter combining softened/room temperature butter, lemon zest and the fresh thyme leaves together. Add the kosher salt and mix well.

      What do you do with the lemon zest/peel from the ingredients??

        I added to the butter it was fine

        Good question - they totally left that out. It goes with the butter. Thyme and lemon are common in compound butter. Although it's usually the juice and not the zest. This seems like a lot of zest for this use. I would scale back personally and add a little juice instead.
