  • Step 1

    Peel the zucchini and carefully slice into 6 strips lengthways about 1/4 inch thick.

    Brush the zucchini all over with the oil and lemon juice and season with salt and pepper.

    Heat a griddle pan over a medium / high heat and add the coated zucchini strips. Cook for 2-3 minutes on each side until tender and charred.

    To serve, crumble the feta over the zucchini and scatter with pine nuts, chopped fresh mint and a drizzle of olive oil.
