There’s not much to say about Egg Drop Soup. The flavors are built on a few fresh spices. There’s fragrant garlic, sweet ginger, and ever-so-slightly spicy sesame seeds. Add a dash of freshness from the green onion, and you have layers of delicious goodness to enhance a couple protein-packed eggs. Wow, who are we kidding? Egg Drop Soup sounds pretty great!

    ½ cup, chopped

  • Step 1

    Heat the olive oil in a soup pot on medium heat. Toss in the sesame seeds, minced garlic, and minced ginger. Cook them for about 60 seconds so the ingredients become fragrant.

    Pour in the chicken broth. Cover the soup pot and bring the liquid to a simmer. Meanwhile, whisk together the egg, salt, and pepper in a bowl. Leave the egg only halfway whisked.

    Once the soup is at a strong simmer, pour the egg mixture in by whipping it with a fork and gently drizzling it into the soup. The egg should cook immediately and be very stringy. Use the fork to break up any large pieces of egg in the soup.

    Chop the green onion and stir it into the soup. Let the soup simmer uncovered for about 5 minutes. Serve hot!

                  Quick, easy and flavorful! Since I’m working with what I have on hand, my only modification was using the green onion with dehydrated chives, and I used half the amount. Loved the surprise bursts of flavor with the ginger and garlic. Warming and very filling!!

                            It is very easy to make vegetarian. I'm low sodium, there aren't many recipes that are tailored to this. So, I'm flexible and I adapt recipes to fit my needs.

                              Can you add an edit button? I used bullion cub because I didn't have enough broth and I added sautéed in butter mushroom and onions. Delicious!

                                    Very bland. Feels like it’s missing something. I think if I make this again I will be adding more spices and some sort of meat to it.

                                    Thanks for the great idea of egg drop soup! I modified it quite a bit - cooked a little Cumin, Corriander, and Turmeric and a pinch of pepper in a little ghee - sautéed in a little chopped mushrooms and zucchini - added low sodium chicken bone broth and a 6 drops of toasted sesame oil - then drizzled in the egg. YUM !!! I love soup and am not a big meat eater so this is a good way to get my protein. So satisfying. Thanks for great idea!!!!
