This is a fairly quick meal to whip together! Roasting the romaine is a different way to enjoy lettuce and makes the lettuce sweet and crunchy. The soft boiled egg is my favorite part! It makes a sauce for all the rest of the meal!

  • Step 1

    Bring a small sauce pot of water to a boil, slowly drop the eggs into the boiling water. Boil for 6 minutes. Pour off the boiling water, fill pot with cold water and lots of ice! This will help the shells come off very easily.

    Preheat oven to 400 F and place bacon on a sheet tray side-by-side by not touching. Bake for 15 minutes.

    In the meantime, slice the romaine heads in half. Once bacon has been cooking for 15 minutes, add the lettuce cut side down. Bake for another 7 minutes. Flip lettuce over and sprinkle lettuce with ¼ teaspoon of kosher salt.

    Serve bacon and lettuce with sliced avocado, sliced tomatoes and soft boiled egg! Sprinkle avocado, tomato and egg with a little salt and pepper if you’d like!

      This was delightful! I didn’t have any lettuce ready in the garden so I used raw baby spinach instead and dressed it with a little olive oil and red wine vinegar. Thank you for this simple, but yummy plate.

        The egg turned out perfect. I wasn’t a big fan of the grilled lettuce so next time I’ll just leave it uncooked.

          New to keto and this was simple yet deliscious. Wasn’t sure about the Romain lettuce being baked, but it was all very good!

            Ok, can anyone tell me if this is 1 serving or 4? I see 4 boiled eggs and 9 slices of bacon lol is this really 1 serving? Sorry I feel stupid asking but this is confusing to me.🤦‍♀️🤣

              The recipe is for 4 servings, the macros are for 1 serving. If you don't want to make all four servings change the "servings" under "About The Recipe" to however many servings you want to make and CM will adjust the ingredients for you. But CM will still be recording macros for 1 serving, unless of course you decide to eat 2 servings all by your lonesome.

              That would be for 4 servings. If you scroll down the recipe it has the option to insert the number of servings you want to make with the correct amount of ingredients.

                Morning Star makes a very good tofu bacon strip. I’m not vegetarian and I love this bacon by Morning Star.
