  • Scallions

  • Cucumber

    Cucumber

  • Salt, Sea Salt

    ¼ teaspoon

  • Black Pepper

  • Step 1

    Slice the cucumber in half and scoop the seeds from the center and discard. Slice the cucumber into half inch chunks and add to a mixing bowl.

    Roughly dice the avocado flesh and chop the scallions and cilantro. Add to the bowl with the cucumber and toss to combine.

    Whisk together the yogurt, olive oil, lime juice, salt and pepper. Spoon over the salad and stir well, coating everything in the dressing. Refrigerate until ready to serve.

          I added 1/8 cup of feta because why not? This was very good and more filling than I thought it would be. It’s definitely going into my weekly rotation!

            This is good, easy and with very low carb count. I added broccoli sprouts when tossing. and used mayo instead of yogurt.

              Low carb count? 8.9 grams of total carbs is not low. Net carb is not an actual thing. If you want to stay healthy, count total carbs. Anything else is a fib.

                  Delicious! Used a little more fresh squeezed lime than called for, but this was easy to make and refreshing. Making a larger bowl for company this weekend.

                    Love this…I used Persian Lime Olive Oil along with the lime juice. I love using flavored olive oil’s they had so much more to a regular dressing

                                  Fast and tasty. Definitely take the skin off the cucumber. I used sour cream instead of Greek yogurt. Love the taste. It's saved to my favorites.
