Keto Lemon Roasted Salmon and Green Beans with Crème Fraiche and Crispy Capers
This salmon dish is so easy yet super tasty. Simply roasted salmon and green beans are seasoned with our keto crispy capers and just a hint of zing from preserved lemon accompanied by crème fraiche infused with aromatic dill.
This is a great meal if you are after an easy to prepare mid-week treat! Perfect served alongside a simple green salad or a portion of cauliflower rice. The recipe for the keto crispy capers can be found in the sides section.

Ingredients
Salmon
4 medium salmon steak
Green Beans
10 ounce
Creme Fraiche by Yoplait
6 ounce
Lemon Juice Raw
2 teaspoon
Preserved Lemons by Simon Johnson
1 lemon
Keto Crispy Fried Capers

Olive Oil
2 tablespoon
Dill
1 tablespoon
Salt
¼ teaspoon
Black Pepper

Step 1
Preheat the oven to 395 degrees Fahrenheit and line a shallow oven tray with baking paper.Step 2
Arrange the salmon fillets across the baking tray along with the green beans.Step 3
Season with the salt and pepper and drizzle with the olive oil. Use your hands to rub the oil and seasoning all over the salmon and beans.Step 4
Finely slice one small preserved lemon and scatter over the salmon and beans.Step 5
Transfer the salmon to the oven to bake for 15 minutes or until cooked through and opaque.Step 6
Whilst the salmon is cooking, you can prepare the dressing by simply adding the crème fraiche to a mixing bowl with the lemon juice and the dill, stir well to combine and refrigerate until ready to serve.Step 7
Once the salmon is cooked to taste, crumble over the crispy capers and serve with a generous dollop of crème fraiche.

This was very good! Simple but flavourful. I never really liked capers before, but these fried capers are amazing! I'm the only one who like green beans, so I also made zucchini fries and the kids loved it! I just added a tiny bit of the sauce and a couple capers for them. Was a hit!!

This recipe is so great. Not only does it taste good, its easy to put together and clean up is quick. But the best part of all is how versatile it is. It tolerates substitutions really well. No capers? Most olives will do. Can't find perserved lemon? Slice up a fresh one and add some extra salt. Fresh green beans a no go? Frozen or canned will work. (Drain/defrost first). Outta creme fraiche? Sour cream's got you. I've tried all of these at different times and still got excellent results. Being able to use leftover ingredients or more accessible ones in a recipe is always worth an extra star to me. It saves a lot of time and money.
