Low Carb Roasted Frozen Sprouts with Parmesan

This Keto side dish has been made with frozen Brussels sprouts for ease and convenience. Our simple low carb side is prepared with whole frozen sprouts, olive oil, a little lemon zest, garlic powder, grated parmesan, and a little seasoning. Once the sprouts have been oven-baked, they are finished under the broiler to crisp the edges and melt the cheese. This is a great option for using up frozen sprouts and adding extra fats and flavor.

Do I Need to Thaw the Sprouts?

The sprouts do not need to be thawed before cooking; they can simply be added to the tray frozen, minimizing the prep time. Once roasted, the frozen sprouts will be soft in texture, making them easy to chop/crush. Chopping/crushing the sprouts after roasting allows them to crisp up better in the broiler and get perfectly golden around the edges.

Serving Suggestions

These crushed sprouts make a great low carb side, served with your preferred Keto mains. The sprouts would make a great alternative to boiled sprouts served with a Sunday roast lunch. They would also be a good option served with grilled meats or fish. Please be sure to adjust your macros for any changes or additions made to the original recipe.

  • Step 1

    Preheat the oven to 400 degrees Fahrenheit. Line a shallow oven tray with foil. Tip the frozen sprouts out onto the foil lined tray and arrange in an even layer. Transfer to the oven to bake and thaw for 10 minutes.

    Remove the tray from the oven. Drizzle the olive oil over the sprouts and sprinkle over the salt and pepper. Return to the oven for a further 13-15 minutes to cook through and soften.

    Remove the tray from the oven and preheat a broiler. Roughly chop/ crush the cooked sprouts. Scatter the lemon zest, garlic powder and parmesan over the sprouts. Broil for 3-4 minutes or until browned and crisp at the edges and the cheese is golden. Serve hot.
