  • Step 1

    Preheat an oven to 350 F. Line a mini muffin tin with cupcake liners. In a microwave proof bowl, combine the oil and unsweetened chocolate. Microwave on HIGH for 30 seconds and stir. Add another 30 seconds until it is all melted.

    Mash a ripe avocado in the chocolate mixture.

    Add the eggs and vanilla.

    Next add baking powder, cocoa powder, sweetener, and almond flour together. Mix well to combine.

    Scoop into mini cupcake tins and bake for 12-15 minutes until the brownies are nicely puffed and cooked through. Remove to a cooling rack.

    Moist and delicious. I had pretty much given up on recipes that use vegetables masquerading as something else. I'm never fooled and always disappointed. I'm leaving town and had avocados so I decided to try these to turn my avocados into something I could freeze. I was finally fooled as these little gems are quite tasty with no hint of the avocado taste. They could benefit from a pinch of salt. The only change I made to the recipe was the chocolate. I used 90% Lindt. I frosted one with The Salted Caramel Coconut Whip (recipe from this app) and that was a decadent vittle. Oh, also, I used a silicon mini muffin pan without paper cups or spray and after they were cool they popped out easily.

          Just made these again for the 2nd time.... addictive, eliminates the sweet chocolate craving and I love the fact that it's made with avocado.

                    We love these. Made them twice now. I have figured out that 1/3 of a cup swerve put into the coffee grinder makes 2/3 cup icing sugar swerve. I use my coffee grinder to also grind flax seed for those recipes. Works like a charm.

                        I just put them in a ziplock bag or in Tupperware in the fridge. They last a good week in the fridge. I have never froze.

                      Delish!!! I used a food processor to blend everything so it fluffed and whipped the batter all nice and fluffy too!! They were so squishy and delicious in the center as well. They were a hit with everyone at my work! But I found that they were sticking to my mini paper liners when taking them off though, so next time I will put the batter directly into the mini muffin tin WITHOUT liners, as the coconut oil that seeps out during baking should ensure they do not stick to the non-stick muffin tin. Will be making again very soon! :) YUM!

                        Just made these for Thanksgiving! Wow. Soooo good!!! I used ceramic cupcake cups x6. So, 4 carbs per jumbo browine!

                              Can I use regular swerve granular sugar , ?

                                I imagine if you pulse the granular in a blender or food processor, you'd get a very similar texture and could measure as recipe indicates.

                                Definitely! You will have to adjust the time accordingly but my guess would be they would take 15-18 minutes as a full muffin.
