These hot dog inspired breakfast sausages make a great weekend treat and are fun for the whole family.

Packed with cheese, mustard and a hint of shallot, these sausages are tightly wrapped in bacon before baking.

The recipe calls for 4 pork sausages but you can use any type you prefer.

Ingredients

  • Bacon, Pork

  • Sausage, Pork, Fresh

    4 medium link - breakfast size

  • Dijon Mustard

    Dijon Mustard

    3 teaspoon

  • Cheddar Cheese, Natural

    2 slice- each 3/4 ounce

  • Shallot, Raw

    Shallot, Raw

    1 tablespoon, chopped

  • Olive Oil

    Olive Oil

    1 tablespoon

  • Step 1

    Preheat the oven to 375 degrees. Heat the olive oil in a large pan over a medium heat. Add the sausages and fry until browned all over. Remove from the pan and set aside to cool leaving any fat in the pan.

    Whilst the sausages are cooling, add the shallots to the pan with the sausage fat and fry gently until tender – about 1-2 minutes.

    Once the sausages are cool, carefully slice them down the center lengthways, enough to create a deep pocket but be careful not to cut all the way through. Divide the mustard evenly between the four sausages, filling the centers. Then do the same with the cheese and the cooked shallots.

    One at a time, wrap each sausage tightly in a rasher of the bacon – one rasher per sausage plus some of the additional bacon if required.

    Once each sausage has been wrapped in bacon, transfer to a shallow oven proof tray and bake for 15 minutes or until the meat is thoroughly cooked through.

    Didn't really feel this one. Bought sausage links not stuffed sausage with would be necessary for stuffing. Bacon with sausage and cheese. Yeesh. Someone call the paramedics.

      What Brand of breakfast sausage allows you to stuff it with mustard, shallots, a half a slice of cheese, and may require more than 1 slice of bacon to fully wrap it?? Seriously. And then 15 minutes to cook? Lol. 25 minutes unless you want to eat raw bacon. Even after 25 bacon was just getting there but I was starving

      I enjoyed this! I substituted the mustard for a sugar-free ketchup and mayonnaise mixture as neither I nor my fiancé are big on mustard.

          I used chicken that has spinach and feta in it. Wrapped mine in turkey bacon and it was very good. I would eat this again.

            This was good but a little salty once you make it to the 2nd sausage. If you like a savory breakfast then this is for you.

              Is one serving really 2 sausages? The calorie count looks like one serving would be one "hot dog".

                My guess is that there's 4 sausages in the recipe that serves 2 people so it should be 2 sausages each
