Crispy “rice” cereal is combined with sugar-free white chocolate chips, vanilla syrup, browned butter, and plenty of sea salt. The result? A “rice krispy”-like treat without all the carbs and guilt! The browned butter and sea salt take this dessert over the top! Secretly, these make a great pre-workout snack because of the protein and fat that is in them. This would be a great Keto Christmas dessert or treat.

  • Step 1

    Prepare an 8” x 8” cake pan with nonstick cooking spray or parchment paper. Add the cereal into a large mixing bowl. Place the butter into a small saucepan and cook over medium heat for about 8 minutes or until the butter starts to foam. You should begin to see some brown flecks emerge from the foam. Immediately turn off the heat and allow the butter to keep browning in the hot pan until it is a nice amber color. Allow the butter to cool.

    Melt the white chocolate chips in a microwave-safe bowl on HIGH for 30 seconds. Stir and repeat until completely melted.

    Add the butter to the cereal.

    Add the vanilla syrup and vanilla extract to the cereal.

    Stir well with a rubber spatula.

    Pour into the prepared pan. Sprinkle the top with the coarse pink Himalayan sea salt.

    I can't find this cereal anywhere. The Highkey website doesn't have it either. They do have mini crispy treats and chocolate ones as well - maybe they did away with the cereal?
