Keto Caprese Cucumber Snack Stack
This simple but tasty stack has the classic caprese flavors of tomato, basil and mozzarella, sandwiched between slices of cooling cucumber.
This is a great snack option or party appetizer, or two stacks would make a light lunch served with salad.

Basil, Fresh
4 leaf
Mozzarella Cheese
2-½ ounce
Olive Oil
2 teaspoon
Tomato
1 medium - 2 3/5" diameter
Cucumber
¼ large - 8 1/4" long
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Slice the cucumber, mozzarella and tomato into 1/4 inch discs. Season with salt and pepper.Step 2
Place the mozzarella slices onto four of the cucumber discs and top each with a basil leaf.Step 3
Arrange the tomato slices across each stack.Step 4
Top each stack with a slice of cucumber and a little drizzle of olive oil. Optionally secure with a toothpick to serve.

I just use a tin of tuna 80g and 8 slices of cucumber with a small spoon of mayo , make 4 crackers and devour them 👍
