  • Step 1

    Heat the olive oil in a skillet over a low/medium heat. Finely dice the onion and add to the pan, cooking gently until tender.

    Thinly slice the cabbage and roughly dice the bacon. Add to the pan with the onion, cooking over a medium heat until the bacon is browned all over and the cabbage has wilted.

    Slice the mushrooms and add to the pan along with the balsamic vinegar. Stir to combine and cook for a minute or two until the mushrooms are just tender.

    Add the stock and cream and bring to a simmer, cooking for a 3-4 minutes to reduce and thicken the sauce. Serve hot.

      This is delicious! I really eyeballed mine and made a larger batch, I used apple cider vinegar. Didn’t measure anything. I did the onions and bacon, threw in mushrooms, added a dollop of butter and covered while I cut up the cabbage. Added the cabbage and chicken broth and covered till the cabbage was cooked. Then I added the cream and let that cook for a minute. SO good.

        Yummy. Took a quadruple batch to a potluck and people loved it. Definitely will make this again. I didn’t have onions so I used leeks.

          This is so simple and soo incredibly delicious!! Highly recommend! I took out the onion and used apple cider vinegar instead of basalmic to save a bit on net carbs and it tasted wonderful!

                The flavors & simplicity are really great. The cooking method isn't. The bacon, because it's put in with the cabbage, doesn't get browned. Neither do the mushrooms. Next time, I will cook onions & bacon together, then brown the mushrooms; then the cabbage. I'd deglaze the pan with the chicken stock, then cream & vinegar last for a pop of acidity. I served it as a main meal with riced cauliflower. And salt & pepper! Very good tasting, comfort food!

                  Agree with your cooking method. I swapped out the heavy cream with sour cream. By adding chunked chicken breast (or shrimp) to the sauté it becomes a very satisfying dinner.
