You can make big batches of this Keto side dish in under 20 minutes! This is an easy recipe to choose for meal prepping or when you want to put more focus and time on your main course. Slab bacon is chopped into small pieces and cooked until all the fat releases into your pan. The bacon both seasons and tenderizes the other ingredients. Fermented sauerkraut is the main component of the side dish, offering good nutrition and healthy bacteria for your gut health. Some green beans and fresh dill offer a bit of color and fresher flavors to balance out the sauerkraut and salty bacon. You can store the completed recipe in your refrigerator all week. You can even freeze fully-cooled portions to reheat at another time.

Why Slab Bacon Is Better Than Pre-Sliced Bacon

The directions do offer advice on how to use pre-sliced bacon in this recipe if you can’t get your hands on whole-slab bacon. However, try looking for whole slabs at your grocery store. You’ll find them fresh at the deli counter or vacuum-sealed in the refrigerated section. The benefits of using whole slabs of bacon are that you can cut it to any thickness you like and it doesn’t have all the additives pre-sliced bacon will have. Pre-sliced bacon that comes in packaging typically has extra sugar added to the preserved liquid the bacon is kept in, so it has a longer shelf-life. You’re better off purchasing smoked slabs of bacon, which can keep for a long time when stored properly.

  • Step 1

    Start with a whole slab of bacon. Cut the slab into small cubes, about ½” X ½” in diameter. If a whole slab of bacon isn’t available to you, you can chop pre-sliced bacon from a package into very small pieces. Just note you may have a lot of pieces that are exclusively fat.     Heat a wide pan on high heat and add the bacon to the pan. Cook the cubed bacon until it’s crispy on all sides and the pan is filled with bacon fat. If you’re using pre-sliced bacon, it will cook up more quickly than cubed bacon. While the bacon is cooking, combine the sauerkraut and THAWED green beans in a mixing bowl. It’s up to you if you’d like to rinse your sauerkraut beforehand or not.

    Add the sauerkraut and green beans to the hot pan of bacon. Season the ingredients with all the seasonings except for the dill. Let the sauerkraut cook undisturbed in the bacon fat until it gains a slightly crispy texture. Continually stir and cook the whole pan until you have a consistent mixture of sauerkraut, green beans, and bacon, and all the ingredients are golden brown from the cooked spices. Once done, garnish with the freshly chopped dill.

    Be aware that heat kills the healthy bacteria in raw sauerkraut. The sauerkraut you buy in cans/jars is already processed with heat, therefore is lacking in the healthy bacteria you want.

      I have to say for the ease of making this, and the variety of taste with the mustard powder - I give it a 5 stars. I added mini peppers for color. But overall really good option. (Bacon on most things come out pretty good - including this)

        My husband who is not a big fan of sauerkraut really liked this dish, and I did too! I held back on the dill initially as I wasn’t sure I’d like that, but it added a really nice flavour so will not hesitate next time. Also added some chopped onion which I cooked with the bacon.

          When it states sauerkraut does it mean cabbage? Sauerkraut comes in jars and is pickled

            Nothing wrong with using fresh cabbage if someone doesn’t like the tartness of sauerkraut. I don’t like the store bought sauerkraut straight out of the jar/can either, I would have to mix it with fresh cabbage. The recipe can be adjusted to taste. Just saying…

            You guys should know that store bought sauerkraut doesn’t taste like the homemade kraut, such a different taste! So to ease your tastebuds you can mix in fresh shredded cabbage and cook it by stir frying it first then mix half the amount of sauerkraut the recipe calls for. Try that and see if you like it better.

                This is amazing. I was skeptical, so I made a half recipe. I’m going the other direction and double it next time (which is probably going to be tomorrow because this is crazy good.) . I don’t typically rinse sauerkraut, so I didn’t do that. I just used regular bacon I had on hand.

                    I don’t think you add it because there is an option to rinse it before adding. But anyway—I would guess you want to leave out the juice because that would have the effect of steaming the dish. The picture looks like it has a bit of caramelization which isn’t possible if you steam.

                        We enjoyed this recipe. My sauerkraut was mild so I didn’t rinse. I also didn’t feel the need to add salt. It was very flavorful, easy, and a great side for hot dogs!
