Keto Everything Goat Cheese Cucumber Bites

Just 15 minutes is all that’s needed for a really fast and easy Keto snack. Pick your favorite style of cucumber at its freshest. Layer slices of your cucumber with thick fork-fulls of goat cheese that’s been blended with the popular “everything but the bagel” seasoning. Your goat cheese will be full of flavor from bits of dried onion and garlic with poppyseeds. Everything is topped off with a drizzle of extra virgin olive oil for more healthy Keto fats. Since the recipe is so simple, there are plenty of opportunities to modify it to your tastes or add in additional Keto ingredients. You can make a larger batch of this snack to have extra for later, but the cucumber bites taste best when eaten within 24 hours of making them.

Types Of Goat Cheese To Use

If you stick to just plain goat cheese, you’ll still have lots of flavor from the everything seasoning. However, some brands carry flavored goat cheeses, and some are Keto-friendly. The goat cheese used in the photographs of this recipe was an herbed goat cheese. Use common sense when choosing a flavored goat cheese. Ones made with berries or honey are going to add extra carbs to your diet, but ones made with herbs are less likely to have any additional carbohydrates.

Add More Keto Fat To The Snack

There is room to spare extra stacked ingredients on top of your cucumber. If you want to increase the Keto fat of this recipe, you can add other ingredients such as small balls of whole milk mozzarella, pieces of cooked bacon, or a piece of avocado.     Start with a washed cucumber, and cut slices no thicker than ½-inch. Each slice will weigh about 10 grams. Lay the cucumber slices flat on a sheet of paper towel, and lay a second piece of paper towel over them. Press the paper towel down to absorb excess moisture from the cucumber slices. Leave this set-up aside for now.

    In a small bowl, mash softened goat cheese with a fork. You may leave your goat cheese out on the kitchen counter to soften shortly before starting the recipe to make things easier. Do not heat the goat cheese, however. Sprinkle the everything seasoning in the bowl, and use the fork to mash the goat cheese and seasoning together into a soft spread. Remove the paper towels from the cucumber slices, and arrange the slices on a serving dish.

    One by one, use your fork to pick up and spread a thick layer of goat cheese spread on a cucumber slice. Use the fork to scrape the sides and leave a textured pattern on top of the goat cheese. When all the cucumber slices are topped with goat cheese, drizzle extra virgin olive oil over everything. The textured goat cheese will hold onto the oil so it doesn’t drip down the sides of the cucumber.
