These strawberry cheesecake bites are the ULTIMATE low-carb treats to keep you in fat-burning mode. They are fruity, refreshing, and super creamy. These Keto cheesecake fat bombs have the perfect texture and the right amount of sweetness to satisfy your sugar cravings. They are effortless to prepare and require less than 5 ingredients. This Keto cheesecake recipe is a crowdpleaser, so make sure to double the recipe.

What are fat bombs?

A fat bomb is a snack made almost entirely of fat, combined with other Keto-friendly ingredients to add sweetness and flavor. Most fat bombs are made with nut butter, coconut oil, butter, or cream cheese. This recipe uses cream cheese and heavy cream as the fat sources and strawberry flavored gelatin powder for sweetness and flavor.

What are some fun ways to customize these fat bombs?

These cheesecake bites are super versatile and can be customized in many different ways. You can mix in fresh or freeze-dried strawberries, sugar-free jam, or lemon juice and zest. You can also roll these bombs in a Keto crumb for a toasty flavor and an added texture.

Can you make other fruit flavors using this recipe?

Of course, you can! This recipe can be easily adapted to other flavors. Simply swap out the flavor of gelatin. Some delicious options include lemon, cherry, and peach. Just make sure that you are using sugar-free flavored gelatin.

How to store these fat bombs?

These fat bombs are one of the softest Keto-friendly cheesecake recipes you'll come across. This is why it is essential to use mini cupcake liners to keep them from smooshing together. Once these fat bombs set, store them in an airtight container in the refrigerator for 5 days or 3 months in the freezer.

Maltodextrin (in the Jello) is a no-no on low carb keto. It kicks me out of ketosis so fast, almost makes me dizzy! lol

I was really expecting to love this, based on the ingredients and the reviews. But I taste the artificial sweetener in the sugar-free Jello. And the cream cheese taste is too strong for me.

Absolute winner! And I love that I can change it up just by changing the flavour of the jelly. For Aussie members, just one 9g sachet of sugar free jelly. But trust me, you’ll want to double the recipe!!

So delicious! Every person who tried it loved it. I don’t like to keep partial packages open of jello so I doubled the cream and cream cheese and added the entire box of sugar free jello. Fast, easy and delicious! I used silicone cupcake molds they offered good stability. I also weighed out each portion and the cookie scoop I have was the right size for 39 grams!

Why did you choose 39 grams? Just curious.

So yummy. I make little ramekins of it. So like a dessert mousse.

These are amazing but i recommend leaving out the water step but if you don't I would scoop into cups before refrigerating for an easier transistion

I also would like to know how you get the gelatin to dissolve if you aren't using water 🤔

Definitely need to double this recipe and just use 1 packet of Jello. This recipe as is just doesn’t make enough of this delicious treat!

Gelatin in this recipe needs to be adjusted. 3/23 of a package doesn’t amount to much if you can even figure out that measurement. I will definitely add at least half a package next time for better taste and set up.
