  • Step 1

    Preheat an oven to 350 degrees. Lay the cod fillet on a clean, flat surface. If your cod fillet is full length, you may want to cut it into two short pieces for easier handling. Sprinkle the salt, pepper, cumin, cayenne, and onion powder over the fish.

    Lay down a sheet of aluminum foil that is large enough to wrap around your cod fillet. Spray it lightly with pan spray, then place the cod down in the center of the foil. Smash the garlic clove and place it in the center of the fish. Slice the bell pepper and chop the cilantro, and arrange these ingredients over the fish.

    Wrap the foil around the ingredients so it can be easily opened for serving later. Place the cod in a center rack of the oven and bake for 35 minutes. The cod will become flaky and tender, slightly golden, and the peppers will soften in their juices.

    Serve the flaky cod with a wedge of lime. You can garnish with additional cilantro at your discretion.

    Was good, fish cooked deliciously as the recipe shows. I added a pat of butter before wrapping in foil for satiety.

        This is delicious!!! I did put dried dill in the seasoning the broil in the end then added a dollop of sour cream as Cooky suggested.

          This was sooo Good! I added 2 tablespoons of sour cream after it was done. also added lemon pepper dill and garlic jalapeño seasoning by weber and 1 tablespoon of garlic butter by chef shamy . the butter and sour cream to boost flavor and fat in take for keto. last few minutes of cooking put it on broil then air fry to brown the peppers. the fish was so moist and flaky it melted in my mouth thank you for this easy recipe!!

            This food is missing some kind of fat. Like olive oil or ghee or coconut oil

              I just put ghee to get the fat content but adds more calories.
