Ingredients
Mushrooms
8 medium
Shallot
2 tablespoon, chopped
Unsalted Butter
1 tablespoon
Parmesan Cheese
1 tablespoon, grated
Cheddar Cheese
½ cup, grated
Heavy Cream
⅓ cup
Vegetable Broth, Bouillon Or Consomme
¼ cup
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Clean and quarter the mushrooms and finely dice the shallot. Melt the butter in a skillet over a medium heat. Add the shallots and sweat for a minute to soften.Step 2
Add the mushrooms and cook for 2-3 minutes to soften and brown.Step 3
Add the stock and heavy cream and stir well to combine, gently heating through.Step 4
Add the grated cheeses and stir until melted and the sauce has thickened. Serve hot.

Delicious! I added fresh spinach leaves and chopped fresh asparagus. Instead of shallots I used garlic :)

True.❤ I have also made a similar sauce and used 3 tbsp whisky in the stock instead of cheese. Good with meat.
