Keto Pumpkin Spice Flax Porridge
This is a really easy Keto breakfast recipe you can have ready in minutes. Try it the next morning you have less than 10 minutes to make breakfast - just make sure you have the ingredients on hand. Start with a basic almond milk porridge made with ground flax seeds. Warm spices like cinnamon, nutmeg, and ginger will give you a comforting feeling - perfect for cold mornings or those Mondays you need to be extra nice to yourself. You can even prepare all the dry ingredients the night beforehand, then add your almond milk in a pot the next morning. It’s that simple! You’ll need to make this Keto breakfast recipe fresh when you want to make it, so keep that in mind for your meal prepping.
Can I use pumpkin spice for baking?
Instead of blending your own spices together, make things a pinch easier for yourself. Just replace the baking spices with pumpkin pie spice! You can add more cinnamon or nutmeg if you prefer.
Make sure to serve the porridge right away
It’s important you serve your Keto porridge while it’s hot. Like all oatmeal, once it stands for a while, it can thicken too much. If you reheat the porridge on your stove, you’ll lose more moisture and may dry out your oatmeal.
Coconut oil substitutions
If you are substituting the coconut oil in the recipe, use avocado oil. You can also replace it with nut butter. Almond butter, cashew butter, or peanut butter can all substitute for coconut oil. However, if you use butter, this will affect the final taste of your oatmeal.

I added 1/2 cup oatmeal, reduced the flax seeds, and added strawberries. Enjoyed it much more than original recipe.

I don’t think I’d make it again but the taste is great, it’s the slimy texture.

Great effort. I am still excited of the idea but this is slimey.

I liked it. I added vanilla and omitted cloves and ginger. Topped it with keto syrup and strawberries, it was delicious .

Flavor is there, texture killed it for me. I’ll be trying something else. Glad I tried it, not for me.

I have a recipe that calls for equal amounts flax meal / coconut flour/ chia seeds that has a great texture. I put nuts on top 2 tbs whipping cream. Sugar free maple syrup and cinnamon. Yumm! Like cream of wheat. I make it up ahead and use 1/4cup per person with 1 cup unsweetened almond milk. We love it.

This tastes very good and is a nice change. As several people mentioned, it is a bit like slime, but I had no problem eating it and think you could add different ingredients to change the texture if you need to.

Weird consistency but nice

Consistency takes a moment to get used to. Overall it is an interesting recipe and good way to kick start a Keto diet.

This was special lol I find the flavour super delicious! BUT if you don’t like slimy food, then you really won’t be able to stomach this. I forced myself to eat it cuz it’s what I prepared in advance for the day. I had to force myself to think this was regular oatmeal to prevent myself from gagging. Im not someone that usually has issues with texture so I was surprised that I didn’t like it. So basically, if slimy texture is not an issue for you, then you’ll 100% enjoy this recipe, it tastes delicious! I still recommend making it and trying it before intergrating in a meal plan so you don’t waste ingredients ;)

Ive made this for dinner a couple of times and i really enjoyed it! Added 1tbs of chia seeds aswell. The trick to make it a bit thicker is to ad a pinch of fiber husk and stir/let i boil and then set aside for a couple of min and then pre heat it! I added some peanutbutter along with pumpkinseeds/pecan and crushed blackberries. Delicious in flavour!

I made this recipe using butter instead of coconut oil and added 1/2 c canned pumpkin and a tbsp of chopped pecans. Tasted just like pumpkin bread!

I made this for breakfast using the recipe for 1. The recipe said to use 17g of ground flaxseed meal but I only had milled flaxseed (not sure if it’s the same thing) however instead of using 17g I used 15g due to people saying its like slime. Mine turned out perfect, I added 3 crushed pecans, a teaspoon of double cream and half a teaspoon of sweet freedom light syrup. Admittedly it wasn’t porridge but it is welcome change from eggs for breakfast.

I read the first three reviews which I gathered contradicted many of the previous reviews of not liking this recipe, so I gave it a whirl. I LOVE IT! I’ll be enjoying this recipe over and over again. I went all out and added a half cup frozen blueberries, divided it between 2 serving dishes (one now, one later) and topped mine with 2 teaspoons of cream. Decadent.

I read the reviews first and was worried but I really enjoyed this! The texture didn't bother me at all and the taste was great, lol though I sometimes had trouble keeping it on my spoon. Plus my daughter thought it was hilarious that I was eating "slime' since it does have the same properties of the slime she enjoys making.

I'm glad I didn't read the comments first or I would have shied away! Yes the texture is different, but it is delicious. I'm so sick of eggy foods, and miss oatmeal and cream of wheat. This is a great replacement. I added some heavy cream and pecans. I will make this again.

I agree, can add an egg yolk and omit the flaxseed meal that is good as well...

This was interesting. Yes, slimy, but overall I didn't find it unpalatable (although my fiance did 🤭). I think it could have used a lot more of the spices and some extra sweetener (the flavor is very mild otherwise), and I would suggest serving with a couple of tablespoons of HWC on top-- or some berries, Lilly's chips, nuts, or *something* with some texture-- just to break up the slimyness.

Toasted walnuts were good on mine.

What is HWC?

I liked it. Yes the consistency is interesting but I added a TBSP heavy cream after cooking and it wasn’t as slime like. I’ve made this a couple of times because it’s easy. I have also used pumpkin spice. It is filling.

Thank you!! Will try with the heavy cream :)

The texture is super slimy, couldn't eat. I think it's the flax?

The flavor of this is amazing, but as much as I REALLY wanted to like this, the slime texture made me gag. I'm still gonna try the other porridge recipes on here though. Maybe the addition of the coconut flour in another porridge recipe that I read on here will make a textural difference. Hope so!
