Ingredients

  • Cauliflower

  • Cheddar Cheese

    ⅔ cup, diced

  • Spices Nutmeg Ground

    ⅛ tsp

  • Salt

    ¼ teaspoon

  • Black Pepper

  • Step 1

    Preheat the oven to 390 degrees Fahrenheit.
  • Step 2

    Place the cauliflower in a large saucepan. Cover with water and bring to a boil. Reduce to a simmer for 7-8 minutes until tender, but not too soft.

    Drain the cauliflower and transfer to an oven proof dish.

    Heat the butter in a large saucepan over a medium heat and add the onions. Fry gently until soft.

    Add the cream cheese and 1/3 cup of grated cheddar to the pan. Stir until melted and fully combined. Stir in the nutmeg and season well.

    Spoon the cheese sauce over the cooked cauliflower and sprinkle over the remaining grated cheddar and parmesan. Season with a little pepper.

    Transfer to the oven to bake for 18-20 minutes until golden and bubbling.

          I use dried onions - much less carbs! Still get the flavor

            Great idea as I do not really need the fresh onion flavor. Assuming you probably did a Tablespoon of dried??

              Whilst this dish is delicious, it does contain carb bombs. However, eating them once in a blue moon will be just fine for me, this is a way of life not some kind of fad. I’ll be making it again that’s for sure.

                I haven’t tried this yet, but am curious why the carbs are so much higher? I didn’t see anything that I thought had higher carbs. It looks delicious!

                Absolutely delicious! Top it over ground meat for a complete meal. I also sauteed till crisp two slices of bacon cut into small pieces and mixed in with the 1/3 of cheddar topping. My husband loved it! Had to make sure we didnt over eat it.
