Ingredients
Chorizo
2-½ ounce
Raw Egg
2 medium
Olive Oil
1-½ tablespoon
Cauliflower Rice
1-½ cup
Garlic
1 clove
Red Onion
1 tablespoon
Baby Spinach
1 cup
Black Pepper
⅛ teaspoon

Step 1
Heat a tablespoon of olive oil in a skillet over a low/medium heat. Crush the garlic and add to the pan along with the onion. Sweat gently until tender.Step 2
Roughly dice the chorizo and add to the pan, cooking until lightly golden and the chorizo begins to release its oil.Step 3
Add the cauliflower rice and the remaining olive oil. Stir well to combine, coating the cauliflower rice in the oils.Step 4
Add the spinach and stir into the pan so that it is just wilted.Step 5
Make two wells in the mixture and crack one egg into each. Let the egg cook over a medium heat for a minute or two then cover the pan with a lid and continue to cook the egg to preference. Season with a little black pepper to serve.

This is a nice simple meal. I would enjoy more chorizo in the recipe and will add a bit more next time.

I make this a lot. Super easy and tastes great. Also works well with Farmer Sausage. I like mixing in a teaspoon of Nando’s Perinaise right before eating.
