    Preheat an oven to 350 degrees. Line a 6-ct muffin tin with a slice of deli chicken in each tin. If necessary, use a biscuit cutter or cookie cutter to cut your chicken slices into circles. Distribute 1 tablespoon of shredded mozzarella in the base of each chicken cup.

    Dice the grape tomatoes and place the equivalent of 1 in each chicken cup. Drizzle ⅛ teaspoon balsamic vinegar over the tomatoes in each cup.

    Bake the tray for 13-15 minutes in the oven. Allow to cool before enjoying. Garnish with fresh basil if you have it on hand!

    Any suggestions on what kind of deli chicken meat should be used? The ones I looked at had sugar and stuff added in so they weren’t zero carb.
