  • Step 1

    Slice the ends from the zucchini, peel the outer skin and discard. Peel the zucchini into long wide ribbons and add to a bowl. Sprinkle with the salt and toss to combine. Set to one side for 20 minutes to draw any excess moisture out of the zucchini then drain away.

    Preheat the oven to 400 degrees Fahrenheit. Heat the olive oil in a skillet over a medium heat and add the ground pork. Cook through until browned all over.

    Spoon half of the ground pork into the base of an oven proof dish in an even layer. Layer over half of the zucchini strips so that they are overlapping. Make sure the layer of pork is covered with a layer of zucchini.

    Spoon two tablespoons of marinara sauce over the zucchini layer. Spread the sauce across the zucchini with the back of the spoon so that it is evenly covered.

    Add the onion and olives to a mixing bowl along with the oregano, grated mozzarella and grated cheddar. Stir well to combine the ingredients.

    Sprinkle half of the cheese and olive mixture over the marinara layer. Again, ensure that this layer is as even as possible.

    Repeat this process so that you have an additional layer of ground pork, zucchini, marinara and cheese mixture. Make sure that it is level to ensure an even bake. Transfer to the oven for 15 minutes until the cheese is melted and golden.

    Whilst the casserole bakes, roughly tear the salami into bite sized chunks. After 15 minutes, remove the casserole from the oven and arrange the salami across the top. Return to the oven for a further 10 minutes until golden and everything is piping hot through. Serve hot.

    Really good! My 3 year olds ate a bowl full each! They even ate the onions and olives too! Will definitely make this one again and maybe change up the toppings.

      Absolutely delicious and totally cured my pizza craving!! My hubby doesn’t like zucchini and he had no idea there was any in it. I do wish it would’ve recommended a pan size, but I found one that worked.

        Made it like the recipe except I used pepperoni instead of salami. It had a lot of liquid. Should I have drained the pork after browning? I did drain and blot the zucchini strips. I will probably make again.

                Doubled the Marinara and used bout 1/4 cup more of each cheese and it was amazing. Whole family loved it and it was quick and easy to make. Will definitely be making again.
