This salad is quickly becoming a regular meal in my household. Salad is quick and simple if you plan ahead and prep a few things like eggs, salmon and wash the greens. It holds up incredibly well if you pack the salad and dressing separately when you take it for lunch, so prep a couple! You will love all the fun textures and flavors of this salad. The green beans are so crispy and the capers are briny...I love it!

Ingredients

  • Salmon

  • Kosher Salt

    3 cup, shredded or chopped

  • Capers

    2 tbsp, drained

  • Kalamata Olives

    8 Greek olive

  • Anchovy

    Anchovy

    2 anchovy

  • Dijon Mustard

    Dijon Mustard

    2 tsp, or 1 packet

  • Kosher Salt

    ½ teaspoon

  • Lemon Juice Raw

    Lemon Juice Raw

    1-½ tablespoon

  • Olive Oil

  • Step 1

    Wash lettuce until clean. Microwave green beans in a microwave safe bowl with 1” of water for 30 seconds. You want them to be cooked but crispy.

    Preheat an oven to 400 F. Sprinkle salmon with ½ teaspoon of salt distributed among both fillet. Roast for 10-12 minutes until salmon is medium rare.

    Mix anchovies, salt and dijon together to form a paste. Then add lemon juice and olive oil. Whisk to emulsify all ingredients together.

    Assemble two quart sized mason jars in this order: lettuce, green beans, salmon, olives, capers, hard boiled eggs (halved) and more greens. Keep dressing separate and pour over right before serving.

    I’m concerned about the “medium rare” salmon, unless you purchase sushi quality salmon you should be cooking the fish to a minimum temp of 155 F and checking that in the thickest part of the filet. It sounds yummy otherwise!

      Very good! I subbed 1 tsp Worcestershire sauce for anchovies and asparagus for the beans. And made it in a bowl for two . Yumma

        This is great! The al dente green beans made an excellent compliment to the flaky Salmon and wilted greens. I'm not entirely sure why I have to make it in a mason jar - so I didin't - and it came out equally as well. Thanks!

          Jar is a clever way of layering the salad so that it lasts in the fridge for days. Dressing and olives on the bottom, green beans next I am assuming etc.

          Good version of an old classic! I love salad like this ... Substituting tuna works great. Another good version is a sweet chilli salmon with avocado, egg, cherry tomatoes, peppers, chives, and romaine.

              A popular YouTube guy did a Keto Dollar Tree haul and he found wild caught salmon in the freezer section. My local DT was out of it. Pretty sure it goes fast. Happy hunting.

                  A great substitute for capers is pickles, artichoke hearts, or lemons. You can substitute green peppercorns for olives

                Great! I made it from memory the second time and for some reason added a 1/4c of spinach...lol
