Things to smear on your biscuit

If a smear of butter is too plain for you, try smearing a nut butter or sugar-free jam on your mug biscuit. Peanut butter, almond butter, or ground cashews can all be spread on the mug biscuit. If you want to use a jam, opt for strawberry or blueberry jam for the least amount of carbs.

What is ‘sugar-free’?

You can’t have just any ‘sugar-free’ item on the shelves when on the Keto diet. Some sugar alternatives still trigger an insulin response in the body, which can potentially lead to health problems like diabetes. Look for sugar-free foods made with stevia, which can be consumed on the Keto diet.

Coconut flour alternatives

If you can’t have coconut flour, you can substitute it with more almond flour. You can also substitute coconut flour with ground flax seeds. If you do omit the coconut flour, expect to have a slightly less fluffy texture.

  • Raw egg

  • Avocado oil

    Avocado oil

Recipe Steps

  • Step 1

    Combine all of the dry ingredients together. You can combine them in your mug right away or mix them first in a separate mixing bowl. Add in an egg and avocado oil, then stir the ingredients to combine.

    Microwave your mug on high heat for 1 minute. You’ll know the mug biscuit is done when it looks puffed up and slightly darker around the edges. You can gently press down on the biscuit and feel that it’s done as well.

    If you need to microwave the mug biscuit for longer, then do so. Once it cools for a minute, you can slip it out of the mug and slice. Smear a pat of butter on the mug biscuit as a Keto-friendly topping.

      Made it three times this weekend alone. Followed recipe exact. Including the sweetener, which I couldn’t get a strong sweet taste. Really enjoy it.

        Four days in to Keto and my expectations for this recipe were not high, lol. It was delicious! In the future I will not use the sweetener unless I’m using it as a “sweet treat”. So good!

          Used everything but the sugar. My mama said that you don't eat sweet biscuits in the South lol. But it turned out great!

            This was really good, I will make this more often but I made some adjustments. Put about 1/2 t of everything seasoning, eliminated sweetener altogether. It's a little salty for my liking but I'm not a huge salt person so I will cut that down a little. Didn't use coconut flour at all and just used 4 T of Almond Flour. Really god any worth you trying it out.

              Ewww maybe it’s because I’m privy to delicious homemade biscuits, but after one bite I could not. It was too dry and nearly choked me. Maybe I cooked it too long, but not a fan for this replacement.

              While this is not Poppin' fresh quality, it's a fine Keto substitute. I've made individual zip lock baggies of the dry ingredients to just pull from the pantry and add the egg and oil. I left out the sugar, and this morning I even substituted heavy cream for the oil. Wonderful idea! And I find that half of it is plenty along with a couple of eggs.

                Just made this and thought it was really good. So, I replaced the coconut flour with almond flour, in other words a total of 4 tablespoons almond flour. I replaced erythritol with Wholesum Yum Besti Monkfruit Allulose Powdered Blend (no erythritol) and finally I used olive oil, not avocado oil. Mine had subtle sweetness from the Besti product which I like... I put a little peanut butter on one slice and yummy. Then butter on the other slice - made me happy. 😁. I'm sure you could modify this recipe to a variety of "biscuits".

                  I eat this almost everyday. But, I mix 4 tablespoons of almond flour and one egg, cook it for one minute in the microwave. So good! I then use a little butter and sugar free syrup.

                    I ran out of coconut flour and substituted all ground flax seed. The biscuit was more dense and less fluffy texture, as the recipe stated.Still, this came out delicious! I added the powdered Swerve sweetener, and I added of everything bagel seasoning and the mug biscuit still came out savory.

                      I’m not much of a bread girl, so I don’t go searching for alternatives often. I also don’t expect the substitutions to be as good as the real thing, especially when eggs are involved bc the result can be pretty eggy (i.e., keto pancakes). This recipe, however, was a very pleasant surprise. I will likely omit the sweetener next time and opt for something more savoury. But, wow! I can definitely see this keto bread accompanying other meals now. :) Highly recommend!

                        Pleasantly surprised at how good this was. Next time will omit sweetener and add everything bagel seasoning for a savory biscuit. This is for real a game changer for me. I really missed bread. The keto loaves are ridiculously expensive and so are the buns and this had better texture to me.

                                    Questions for those who have made these: 1. Is the dough made thick enough that I could mix up several batches worth and cut our biscuits to bake? 2. Has anyone made these and frozen them, either alone or as pre-made breakfast sandwiches? I'll definitely try this as a single recipe first, but if I like it, I might premix a large batch of the dry ingredients and use that as a baking mix.

                                      This recipe doesn’t make a dough that needs to be rolled and cut. It’s more of a very thick pancake consistency. I have not tried to freeze this, but I guess it would hold itself well, although this recipe is easy and delicious fresh out of the microwave.
