Keto Almond Pancakes
Tired of making pancakes and waffles with cream cheese? This almond flour version of Keto pancakes will be a refreshing breather from any tangy flavors. These pancakes are very mild and are made with only almond flour and almond butter, along with a few other ingredients. A pinch of cinnamon is added for flavor, but feel free to add other baking spices you enjoy. Since the Keto pancakes are so high in fat, you could eat just a stack as your breakfast! However, you can also eat only 1 serving or half of a serving along with another Carb Manager Keto breakfast recipe.
Pancake toppings
You do have options for pancake toppings on the Keto diet. Since Keto has become globally popular, there are sugar-free syrups you can now purchase at many grocery stores. Simpler options can include melted butter or fresh berries. You can eat moderate portions of blueberries, raspberries, and strawberries on the Keto diet.
Can I use a stand mixer?
If you don’t have a food processor, you can use a stand mixer or hand mixer to make the pancake batter. If you’re using a stand mixer, it’s best to use a paddle attachment. Make sure to scrape down your mixing bowl as needed. Don’t use a blender to make the recipe.
Can I use peanut butter?
If you don’t have almond butter, you can use peanut butter instead. However, expect your almond pancakes to taste like peanuts! You could also substitute the almond butter with cream cheese, but this method will also change the taste of the pancakes.

Step 1
Add the ground almonds or almond flour, ground flaxseed, coconut oil, erythritol, cinnamon, baking soda, lemon juice and almond butter to a food processor. Blend the ingredients well to combine. You may need to scrape down the food processor with a spatula before continuing to blend.Step 2
Add the eggs to the food processor and blend again to form a smooth and thick batter. Leave the batter aside to thicken. The flour and ground flax will absorb the moisture and congeal slightly.Step 3
Lightly oil a non-stick skillet over medium-high heat. Once hot, pour a 1/4 cup of the batter into the pan to form a circular pancake. Cook for about 45 seconds to 1 minute until the pancake starts to firm and bubbles appear on the surface. Flip and cook the other side for 30-45 seconds until cooked through and golden brown.Step 4
If your pan is large enough you should be able to cook at least two pancakes at a time. Repeat with the remaining batter until you have 8 pancakes. Serve with butter or fresh berries.

I would just google how all those ingredients work individually frozen or refrigerated in an airtight bag/container and when it’s time to use it set it out to thaw until room temp

CM, there seems to be a glitch in the matix. I have 2 servings of these pancakes 1 day in my seven day menu plan. My shopping list calls for 9 medium eggs. What gives? Thank you for checking this out. Rae

These were so good! Really fluffy too! I got 4 good sized pancakes. I substituted almond butter for cream cheese. Next time I'm going to omit the lemon juice and cinnamon as I found them overpowering. I think this recipe is a keeper and would be awesome for waffles too!

Lovely! First keto recipe I’ve tried and omg these are so tasty! I actually prefer them over regular pancakes. Lovely nutty/coconutty (I fried them on coconut oil) flavour. Came out a bit thick so next time I’ll add almond milk, but only because it’s difficult to spread them on the pan while frying. I hope almond milk won’t make them less fluffy, because these are fluffy alright! I had them with handful of raspberries blended with a spoon of heavy fresh cream and it was delicious! Super fulfilling as well, kinda having feeling like I shouldn’t be eating them, feels like cheating on my diet😅

I've been trying many pancake recipes and I like this one the most. They are so fulsome I only needed one. I easily made 8. Didn't have Almond butter so substituted cream cheese. Delicious

Delicious. I have a food sensitivity to almost so I replaced the chopped almonds with walnuts and the almonds butter with macadamia butter. So good! Thank you

It means the recipe makes 4 servings (8 total pancakes) and 2 pancakes is 1 serving.

Delicious. I also used regular butter and 6oz almond flour. I didn’t have flax seed so I used chia seeds, but only half the amount of flax mentioned. I also had lime juice not lemon. I used coconut oil in my pan and 45 seconds was best. Definitely flatten like someone else mentioned. I used the peanut butter cream cheese spread recipe (on this app) and wow, what an amazing breakfast. Thanks for this recipe. I may try to make biscuits too.
