  • Step 1

    Preheat an oven to 355 F. Prepare a springform pan by buttering the pan and lining the bottom with a round piece of parchment paper. Combine the dry ingredients (almond flour, coconut flakes, salt, powdered sweetener) together and whisk together to combine.

    Melt the butter in a small bowl. Allow to cool slightly. Add the cooled butter to the the wet ingredients (eggs, vanilla, almond extract) together and whisk to blend.

    Pour the batter into the prepared cake pan and bake for 40-45 minutes or until the cake is nicely browned and springs back to the touch.

    DELICIOUS! This is my favorite treat for now! Baked as cupcakes, and they are just perfect. Great recipe!

      Mini cupcakes bake more evenly while a full cake pan tends to be wet in the middle and overly dry on the edges. I used 1/3 less Swerve and the result is the butter flavor comes out and the aftertaste of the Swerve is gone.

          Tasty and moist. I made the sweetener by putting granular xylitol in a food processor to make a powder. To make it equivalent to Swerve, it's 1 and 1/3 cups xylitol equals 1 cup Swerve. Nonketo spouse wants to eat it.

                          I have to admit that everything us expensive for startup but I remember purchasing premade treats/meals and the variety was limited and quantity was too. By stocking up supplies, I have saved money and have a greater variety by making my own treats.

                            Just had this cake....so delicious! Didnt cook as long cuz I had a large cake pan and baked it for about 30 to 35 minutes...and was able to get 15 slices out it! Thank you for the recipe 😊

                                      Looks good, tastes great. 😁 Mine didn’t rise much, so it was pretty dense. Would baking powder give a lighter result?? 10 carbs per slice wrecks my 17 carb daily macro allocation though 😑

                                        Tried the levening and it left bitter taste. What did work for me was adding one teaspoon of Xanthangum. Like a charm. Still a close texture but you don't have to cut the top off to have a level, straight cake. Not as crumbly. Makes a perfect Victoria Sandwich cake

                                          I love this, but I'm the only one in my house on a keto diet. One serving of this occasionally, especially as a celebration is great, but it does wreck havoc on my macro targets (without doing too much damage on the carbs). So, it is a great desert. But one cake is 10 servings that lasts a long time. I like it enough to try scaling the recipe back for a 4" pan. That should make only 2 servings. Factor is pretty close to 0.2 to scale weights.
