Low Carb Cheddar Italian Sausage Meatballs
Since Italian sausage is already packed with spices, it makes a great choice for a simple meatball preparation! These meatballs are stuffed with cheddar cheese, so nobody can resist them. Enjoy them over zucchini noodles or spaghetti squash, or you can enjoy them as is without the extra carbs!

Cheddar Cheese

Step 1
Use your hands to form 12 meatballs from the ground italian sausage. They will be about 2 ½ inches across. Lay them on a flat surface, and use your knuckle or finger to press a hole into each meatballs.Step 2
Press a teaspoon of shredded cheddar into each meatball. Then, seal and roll up each meatball back to its original shape.Step 3
Heat the oil over medium heat in a pan that is not much larger than the amount of space your meatballs will take up. Arrange the meatballs in the hot oil, and slowly cook and rotate with a pair of cooking tongs until all the sides are golden brown and a little crispy. This may take around 10 minutes.Step 4
Set the cooked meatballs aside on a plate to cool. If you wish, you may use a paper towel to remove any excess grease you don’t want. Enjoy hot while the cheese is melty!

Simple and delicious weeknight meal! I made this with things I already had in my fridge. I combined the sausage with ground beef and stuffed with mozzarella. Served it over a bed of sautéed kale with a tomato-cream sauce.

I cooked mine in my Phillips Airfryer at 375, for 8 min. , turn at 4 min. Amazing!
