Keto Garlic Rosemary Pork Chops

I love how this meal demonstrates that beautiful and delicious food can be done with only a few, simple ingredients. Try to use a cast iron pan, if you don’t have one, any other heavy bottom pan will do. The trick is to make sure the pan is screaming hot before adding any oil. Then add the oil and the pork chops! Do not touch them until you can see a ridge of browning on the edges. It’s ok if one side is cooked more than the other side because the chops will be flipped and basted with butter at the end. The smell of rosemary drifting through your house will be amazing, I promise! The salt and pepper amounts I added here are guidelines, please season with salt and pepper to your taste. Recipe calls for 3 T rosemary, but use 3 fresh sprigs.

  • Step 1

    Season the pork chops with salt and pepper on both sides.
    Step 1

    Heat a cast iron or heavy bottomed pan until very, very hot. Add the 1 T ghee and then the chops. Turn the heat down slightly so the pan does not burn. Sear on the first side for at least 5-7 minutes until the bottom is very browned. Do not be tempted to peek underneath! The longer the pork is in contact with the pan the better, if you break that “seal” it won’t get as browned as it should be without getting overcooked.

    Next, flip the pork and add in smashed garlic cloves, rosemary sprigs and the butter. Wait until the butter is melted, then tilt the pan and using a spoon, spoon the butter over the chops until they are cooked through a few more minutes.

    Remove the chops and add in vinegar to release the delicious browned bits from the bottom while scraping the pan. Add the chops back in stir around in the pan.

                              Oh my gosh! These were bomb! I used bacon fat instead of ghee. And finished them off in the oven for 30 minutes at 325 with a pan of roasted radishes. There are 3 of us so I cooked 6 chops and 2 bunches of radishes. Hubs and the Bro-tater loved it. They want to eat keto with me!

                                    This was great. Instead of using a fry pan I placed the chops on top of all the ingredients and roasted at 400F for 20 minutes.

                                      Absolutely fantastic and so quick and easy....but im confused by the serving amounts /ingredient amount 😕......its 24oz pork ÷3 = 6oz.....??? Am I being simple? But I carnt see a serving being only 4oz....please help 🙏 😢

                                        If you're eating low carb the meat has none it's the garlic and rosemary that carb it up... leave them out and eat all you like (...but yes, your math is off)
