    Finely chop the almonds and cashews. Add the almonds, cashews, sunflower seeds, pumpkin seeds, sesame seeds, shredded coconut, chia seeds, almond flour, and erythritol to a large bowl. Mix to combine.

    Add the vanilla extract, cinnamon, and maple syrup. Mix well again. Taste and optionally add some more sweetener.

    Preheat the oven to 150°C (300°F). Line a 28x20 cm baking tray with parchment paper. Melt the butter in a microwave. Press the mixture into the prepared pan. Lightly brush with butter and bake for 20 minutes. When done, remove from the oven and cool completely.

    Break into smaller pieces. Serve immediately or store for later. It pairs perfectly with maple-flavored syrup.
