  • Cauliflower Rice

    Cauliflower Rice

    1-½ cup, cut pieces

  • Avocado

    4-½ ounce

  • Cilantro

    Cilantro

    3 teaspoon, chopped

  • Cheddar Cheese

    Cheddar Cheese

    9 tablespoon, shredded

  • Step 1

    In a large skillet, heat the olive oil on high heat. Toss in the ground turkey, salt, pepper, cumin, cayenne, and onion powder.

    Cook the turkey until it’s fully cooked and seasoned - about 8 minutes.

    Distribute the cooked turkey into 3 meal prep containers. Discard any excess liquid in the pan, and then return it to the stove on medium heat. Toss the cauliflower rice into the hot skillet, and let the rice get slightly browned and toasted.

    Once done, transfer the cauliflower rice to the 3 meal prep containers as well. Each container should get about ½-cup of rice. Evenly distribute slices of avocado, chopped cilantro, and shredded cheddar as well.

    I added lettuce and sour cream to make it feel like more of a balanced dish. Super delish. I still came in 65 cals and 2 net carbs under with adding those!

          I add shredded cabbage, tomatoes, red onion, and i make lime, cilantro and garlic cauliflower rice. with sour cream and salsa, on too, wonderful dinner or lunch

            This was really good I made a few and out them in the freezer! Just left out avocado as I feel it's something that needs to be put in fresh! I also chopped my cilantro and cooked it in with my cauliflower rice! Added a little more flavor to the rice!

              Great idea but wouldn’t cut the avocado ahead of time. Would be brown by day two. 🤷‍♀️

                That’s what happened when I made these. So the next time I made use of the avocado I cut that day in other things. And for day I planned on eating one of the others, I just cut a new avocado. Also, I made sure to buy petite ones too.

                    My kids loved it (the cauliflower rice, cheese and turkey). It was slightly hot.

                      Browning the cauliflower rice is THE trick. Completely changed what I thought about the stuff. The spices I adjusted to suit my child but what a yummy easy mix to put together...we had it for dinner!
