  • Cheddar cheese

  • Step 1

    Wash and dry cucumber. Trim the ends of the cucumber with a sharp knife. Feel free to peel the skin from the cucumber, if desired, but it can be left intact. Then cut the cucumber into ¼” slices. Take each slice of a cucumber and cut out the center of it using a small cookie cutter. Be sure the cookie cutter fits right in the center of the cucumber slice so as to not break the edges. Use the same cookie-cutter shape to cut shapes from the two slices of cheese. The cut cheese shapes should fit perfectly inside the cucumbers. Keep chilled until ready to serve.

    Mix the remaining ingredients together to make the sour cream ranch dip. Serve the filled cucumber slices with the ranch dip.
