  • Step 1

    Use a knife and fork to finely shred and chop 2 small cooked chicken thighs. The finer the chicken, the easier it will be to pack into celery sticks. Combine the chicken in a small bowl with the buffalo sauce, cream cheese (you can soften in a microwave first for 15 seconds), pepper, and cheddar cheese.

    Cut the ends off 2 large celery stalks, and cut the stalks each in half, equaling 4 pieces. Each piece should be about 1 oz in weight.

    Carefully pack the chicken filling into each celery stalk and enjoy! You can enjoy as a cold snack, or you can heat the filling before arranging it in the celery.

      Wonderful filling low carb snack! Satisfies a filling of the belly, and amazing crunch factor. I think I’ll incorporate some fresh cilantro and pico de Gallo next time so it’s not so much like a Buffalo “dip”.

        I cook the chicken shred it, then add the hot sauce, cream cheese and cheddar cheese in a crockpot and eat it warm, so good!

          Loved it. I boil boneless breasts then use a food processor. Bacon is a good add with a bit more hot sauce. Leftover goes well with low carb tortillas cut like pinwheels.

                    I used only 1 oz cream cheese and 2 oz shredded cheese . There would be less carbs and less on fat side too
