Keto Cucumber Salad

If your dinner or lunch entrée happens to be a little heavy, but you’d still like a side dish, this light cucumber salad is the perfect solution! The cool cucumber slices are slightly sweet, slightly tangy, and stay crunchy. You can even whip up a batch and can it in mason jars so you can enjoy the light cucumber salad during any time of year.

  • Step 1

    To prepare the cucumber slices, peel and core the whole cucumbers. Use a knife or a slicer to slice the cucumbers incredibly thin and combine it all in a bowl.

    Chop the fresh parsley, and add all the remaining ingredients to the bowl. Gently fold the cucumber slices and seasonings together.

    Place a piece of plastic wrap over the cucumbers and seal the bowl with a lid or additional plastic wrap. Refrigerate the cucumber salad for at least 6 hours but preferably overnight. For serving, gently stir the ingredients together, and garnish with additional chopped parsley.

    I just made it so I will rate it in 6 hours. I put in some sliced grape tomatoes and chopped red onion, just a little for some color, but not enough to up the carbs much. I’m used to a sugary vinegar dressing on my cuke salads, so anxious to try this. I may have to add some monkfruit. Oh, and I didn’t have fresh parsley, so I used dried. I added a little fresh basil from my garden.
