Keto Cold Garlic Parm Zoodles

22 ratings

This is an excellent side that serves two purposes: 1. It can be whipped up in minutes to join your main entree. 2. You can add a healthy percentage of fat to your meal in an easy, low-carb recipe. The zoodles are a little crunchy, but the coating of parmesan and oily garlic makes this side dish truly addicting.

Use a spiralizer to cut the zucchini into noodles. You may want to use thinner zucchini noodles, instead of thick noodles, for a more enjoyable texture. Combine all the ingredients in a bowl.Toss gently before serving.

I'm not big on cold sides, so I heated this up with the same ingredients. I was amazed how flavorful it was. I will definitely be making this again.

Does this reheat well if I meal prep a day ahead?

As is, is one serving. You can adjust the serving at the top any any recipe and it will adjust the ingredients.

I removed the lemon, and (to me) it’s much much better. The lemon was not working for me. Great and simple recipe though!

Love this! I added some basil pesto (1g net carb added) and it was just great! So simple and I got a complement on my culinary abilities in the break room at work.

So good! Cooked the zucchini for 3 minutes in microwave. Warm and still crunchy. Family loved it.

I cooked the zoo does for a minute in the microwave so they were still crunchy. I may have used too much garlic and I always add extra 😳

I used the larger noodle cut and steamed them for about 3 minutes...they were so yummy...warm but still crunchy. I do not like mushy zucchini.

Amazing as a side. I ate them warm instead.

Love this and I added a raw egg at the end of cooking to give myself the spagetti carbonara effect, also added 1 slice of cooked bacon, delish

Nanette in the recipe you don’t cook them but not everyone likes them raw. Personally I just sauté them with the all the ingredients except lemon juice and Parmesan for 2-3 minutes then add the remaining ingredients and turn off the stove

The recipe doesn’t mention cooking. For how long did you cook them? Mine tend to fall apart when I try.
