Unsweetened Vanilla Almond Milk
2 cup
Chia Seeds
2 ounce
Blackberries Raw
¼ cup
Cacao Nibs
⅛ oz

Mix chia seeds, almond milk, and stevia together in a bowl. Microwave the bowl in 45-second intervals until mixture is HOT, stirring in between each time. Make sure to stir very well before you chill the pudding later so all the seeds can rehydrate.Step 2
Spoon the almond pudding in individual cups for serving and top with berries and cacao nibs as desired! Cover the cups or jars with plastic wrap and let them sit in the fridge overnight. The next morning, your pudding will be thick and ready for eating.

Came out perfectly.I boiled it in a sauce pan on the stove top on low heat and also maybe added a bit more chia seeds. It thickened as I kept stirring.

Mine didn’t turn into pudding. What did I do wrong? It’s just milk with the chia seeds and the mix ins. I did microwave until it was hot and mix after. Not sure why it didn’t thicken. Any thoughts?

It should be 2 tablespoons of chia seeds for every 1/2 cup of milk. Also, cooking chia seeds causes them to lose their nutritional benefits. So I never cook them. Mix the ingredients in a glass jar and put in the fridge. Take it out after 30 mins and mix again to redistribute the seeds. Then let it sit in the fridge overnight.

I noticed the recipe called for ounces not tablespoons. Weighed it out on my kitchen scale and it was perfect! I think the people complaining about it being running didn’t add enough chia seeds.

It’s confusing to list ingredients in ounces rather than cups or tablespoons. I have my own recipe and don’t have to drag out the kitchen scale.

I’m not sure I would make this again. I did add 2 TB ground flaxseed, and it was not runny. It does have a bit of a slimy texture and I’m just not so sure that I am a fan of Chia pudding.

I made with almond milk but I added 1 scoop of WPI. I suppose if I didn't it would've been very watery. Perhaps 1/2 almond and 1/2 coconut cream would be ideal. I also added peanut butter. It's nice and refreshing. 4 stars for me .
