Ingredients

  • Portabella Mushrooms

    Portabella Mushrooms

  • Mozzarella Cheese

    Mozzarella Cheese

  • Tomatoes

  • Olive Oils Extra Virgin Organic by Spectrum

    ½ teaspoon

  • Black Pepper

Recipe Steps

  • Step 1

    Slice the stems from 4 portobella mushrooms and place top side down.
    Step 1
  • Step 2

    Slice the mozzarella into 4 even discs and arrange 1 slice on each mushroom.
    Step 2
  • Step 3

    Slice the tomato into four even discs and arrange these on top of the mozzarella slices.
    Step 3
  • Step 4

    Sprinkle ½ teaspoon of dried oregano over each mushroom and season well with salt and pepper.

    Preheat a broiler to high. Once hot, arrange the mushrooms on a tray and broil for 6-7 minutes until the tomatoes are soft, the cheese is beginning to melt and the mushrooms are tender.
  • Step 6

    While the mushrooms are cooking, add the olive oil to a small bowl and mince the garlic. Stir the garlic into the oil.
  • Step 7

    After 6 or 7 minutes, the mushrooms should be almost completely cooked. Slide the tray out from under the broiler and drizzle the garlic infused oil over the tops of each mushroom.
  • Step 8

    Place back under the broiler for 40 seconds/1 minute one to finish cooking, being careful not to burn the garlic. Scatter with fresh basil to serve

      Great meal, but something wrong with ingredients per serving vs generated shopping list. 1 serving is one mushroom, I have set 3 servings per dinner to hit my calories, which should give me 3 mushrooms. But there is only 1 mushroom on the shopping list.

        SO delicious!!! Next time with the huge portobellos I’d try to cut them in half and then double the recipe for the toppings.

              Absolutely delicious! One of my favorite recipes yet. The only changes I made was using an Italian seasoning blend in the olive oil and I topped each with a tablespoon of fresh grated Parmesan. I could eat these all day long.

                        Though I used sliced regular mushrooms which made an "au gratin" type of dish, it turned out fine. To increase the amount of protein, I topped with 50 g of diced smoked trout.

                        I broil the mushrooms on high for about a little less then a minute with olive oil, salt and pepper like Nbfgwilks said and then followed the rest of the recipe. They turned out great. No liquid and the centers were the right amount of soft with a light crunch around the edges.

                          So liquidy when I made this the 1st time. The 2nd time, I broiled the bellas for 5 min, used 1 Tbsp Raos marinara per bella under the cheese, omitted all seasonings but basil and omitted tomato slices. I used 1 chopped cherry tomato for each bella atop of the cheese. I also added a sprinkle of garlic salt over the chopped tomato and cheese and basil. This brings the carb count way down and a very similar taste to what I think you were trying to capture without less liquid from the tomato and mushroom. Also, In the recipe pictures, it looks like you're using fresh mozzarella Rather than a mozzarella shred.What type of mozzarella would you suggest would be best?

                            Very good & tasty but I did broil mushrooms with some salt, pepper & garlic powder for about 5 mins before proceeding with rest of recipe. Yummy!

                                Didn’t have much flavor. Also the mushroom was watery. I broiled it before I made the pizza bites.
